At today’s market, we welcomed our newest stall holder — Symphony Farm from Tilba Tilba. We are more than just a little excited about these guys, as they are not only certified organic, but they are embracing the methods of Joel Salatin’s Polyface Farm in the USA. This is the same Joel Salatin of “Food Inc” and “Omnivore’s Dilemma” fame (not to mention lots and lots more food documentaries and books).
The method mimics systems in nature, where animals and the environment are integrated in ways that take advantage of their instinctive behaviours. A natural symphony.
It’s complex and hard work and we are so lucky that Amanda and Graham Thompson have chosen to farm this way in our region. They are offering a range of pastured poultry and beef products and have plans to expand to pastured pork. They have an existing business making organic eucalyptus oil products, which will be available soon also.
The phone is starting to ring everyday with enquiries from more producers and growers about how they can have a site at our market, so it’s already looking like this Spring and Summer will be bigger and better than ever. We can’t wait!!
